The drying time depends a lot on where you leave the sheet to dry. In the humid tropics, if you leave it indoors, the drying time can be overnight or even longer. It's more common to specify paper weight in terms of gsm, so if you can find it defined in those units, that would be better.

But a more important question would be - what do you intend to fold with this paper?

Here's a number of things that people have tried:
- acrylic spray/acrylic paint
- paper varnish or Modge-podge
- nail polish
- dipping into paraffin wax
- dipping into latex

All of these are waterproof, and add some measure of hardness and stability to the model as well.
