Wow! That's quite a horse you've got there! First off, the paper makes it look stunning, and you've somehow captured the flowing majestic look that I just barely accomplish in my folds of the horse. Wonderful!!

first... your Bahamut: you good make in the calves, the wings (include the claws on the wings). the body (especially the chest) you made it not wrong, but not right (the base is right, but it just a base, you know!?)... the legs are wrong (the right thing is folded upside down from the back to the front), the neck and the wings' arms, you didn't fold, that why it so big and short...

second... your Caballo: yes!!! you legs are neat. but, in total, it doesn't have a proportion (the body and the neck are SO big, while the head and the legs are SO small)

that what I think when I see your models.

Only one suggestion: More bones in the tail, and a longer one at that :). Apart from that, it looks very realistic.
